175g Plain flour
50g Icing Sugar
Finely Grated Medium Orange
1tbsp Icing Sugar
25g Plain Chocolate
50g Icing Sugar
1tbsp Orange Juice
To start making these cookies you are going to want to pre-heat the oven to 160C/ or 180C/ gas mark 4. Then mix all of you dough ingredients together. Then leave to chill for an hour.
After an hour has passed use a round cookie cutter (preferably 7.5cm wide) to cut 3mm thick cookies. From this mixture you can get 12 cookies which means you need to cut 24 circles, I only got 6 but I had mixture left over and I did not have another baking tray. Anyway, cut 24 circles and place onto your baking tray with parchment paper on top. From the little spare mixture use that to make the stalks of your pumpkins. Only put a stalk on half of the cookies because you put them together! You are then going to want to use a dinner knife and cut faces into your cookies. This is the fun part! When you have given your cookies cool spooky faces place in the oven for 15 minutes!
Whilst your cookies are in the oven you can start making the filling. To do this melt the chocolate and leave to cool. After your chocolate is cooling beat the mascarpone with the icing sugar and then pour in the chocolate and mix. After this is all mixed together put the filling on the cookies which you have not drawn faces on. Once all the cookies have been filled put the faces on top of your cookies.
To finish your cookies mix the icing sugar and the tbsp of orange juice in a bowl and use a pastry brush to brush the glaze over the cookies. Your cookies are now ready to eat.
